About Tea

Tea in America grew in popularity by leaps and bounds after World War II. Prior to that, Americans consumed mainly Chinese Green and Oolong tea. However, during the Second World War, they had to rely on the British for tea and hence they started consuming only Black tea which was brought in by the British from India. Today, it is served at most places as an alternative to coffee. A preparation of tea very popular in America is iced tea, which is tea served chilled. In fact nearly eighty percent of tea consumption in America is iced tea.

One of the most important cooking tips for eggs is to use fresh products. The longer your product has been in the refrigerator the more flavor it will use. Here are a few more useful cooking tips for eggs.

• Break your products just before using. Breaking them too early will cause them to lose their freshness.

• You should break your products on a flat surface which allows the shell to stay together in larger pieces. Breaking shells on the edge of bowls causes small pieces of shell to fall into your mix.

• Two great cooking tips for eggs are to try to avoid foaming when you are mixing and straining eggs enhances texture and flavor.

• Whenever possible, remove any foam that appears.

• Whenever it is safe to do so, cover with cloth under the lid when steaming eggs. This will prevent water from dripping onto the surface.

• You should use a strong fire for the first 1-2 minutes, then reduce the flame until the process is finished. To check if steamed eggs are finished, insert the tip of a toothpick. If clear liquid is in the hole the eggs are done.

• It is a good idea to be sure not to overcook. Your dish will become hard, and lose flavor and texture if over cooked.

• Allow your product to slowly warm to room temperature before you begin boiling them. Dropping them into boiling water straight from the refrigerator will result in cracking.

• You can boil your products from cold water. This slowly brings the product to temperature without causing cracks.

• Soft boiled eggs take 5-6 minutes. Hard boiled takes twice the time. Good cooking tips for eggs to remember.

• Overcooking discolors the yolk. Two cooking tips for eggs to keep in mind are that yolks will solidify without boiling if put in a pot of hot water for a long time. Whites remain half soft unless boiled.

10 SPRING CLEANING TIPS FOR YOUR KITCHEN

The words “spring cleaning” can make the neatest person cringe. They mean more work. As if cleaning all year long wasn’t enough. Spring cleaning is more than just cleaning…it is deep cleaning. Something that most people do not have time for all year long. Since my expertise is cooking, I have decided to focus on spring cleaning and dirt build up prevention tips for the kitchen….

Baking soda or club soda will clean and shine stainless steel sinks easily. Simply apply directly to surface and scrub a dub dub.

To Remove stubborn water spots from a stainless sink scrub with a cloth dampened with rubbing alcohol or vinegar.

To freshen up your “white” porcelain sinks, place paper towels across the bottom of your sink and saturate with bleach. Let sit over night and rinse.

After you’ve cleaned your refrigerator and freezer place an open box of baking soda in the back of each to help absorb odors for about a month.

A few drops vanilla extract on a piece of cotton placed in the refrigerator will also help eliminate odors.

Wipe refrigerator with vinegar after cleaning to help prevent mildew.

Change your refrigerator light bulbs…that way you never have to worry about them burning out during the year.

To clean baked-on food from a cooking pan, put a dryer sheet in the pan, fill with water, let sit overnight then sponge clean. The anti-static agents help weaken the bond between the food and the pan and the fabric softeners will soften the baked-on food.

To clean burnt or scorched pans, sprinkle pans liberally with baking soda, adding just enough water to moisten. Let stand over night.

To get those stubborn stains off of the inside of you microwave; spray liberally with two parts water and one part bleach, heat on high for 20 seconds and let stand for about an hour. The stains should come right off. For really stubborn stains heat for 30 seconds and let sit for 2 - 3 hours.

Peppermint Ribbons Cookie Recipe

The peppermint ribbons cookie recipe is perfect for the holiday
season. Place a few of these mint cookies with a cup of tea or
hot chocolate for a cozy snack!

Ingredients
3 sticks (1 1/2 cup) salted butter,
softened
1 cup granulated sugar
1 large egg
1
teaspoon vanilla extract
1/2 teaspoon peppermint extract

3 1/2 cups all-purpose flour
1 teaspoon baking powder

Red and/or green decorating sugar

Glaze:
4 ounces white chocolate. chopped
2 teaspoons
shortening

Hardware
Whisk
Large bowl
Medium bowl

Microwave safe bowl
Cookie sheets
Cookie press with
ribbon template
Mixer

Step 1: Preheat oven to 375 degrees F.
Step 2:
In a medium bowl, whisk together flour and baking powder; set
aside.
Step 3: In a large bowl, beat together butter
and sugar with an electric mixer until creamy.
Step
4:
Add egg, vanilla extract, and peppermint extract;
continue beating until well mixed.
Step 5: Gradually
add flour mixture, beat until well mixed.
Step 6:
Fill cookie press with dough, press dough into 12-inch long
ribbons onto ungreased cookie sheet. With a knife, slice each
ribbon every 2 inches but do not separate.
Step 7:
Sprinkle with decorating sugar.
Step 8: Bake 5-8
minutes or until edges are lightly browned. Cool completely,
then break apart.

Glaze:
Step 1: In a microwave safe bowl, on
medium-high setting on microwave oven heat chocolate and
shortening until melted and smooth.
Step 2: Using the
tines of a fork, drizzle glaze over top of each cookie, let
stand until set.

Makes 80 cookies.
